Peanut Butter Truffles or Cookie Bites

  • 2 cups old-fashioned oats
  • ½ cup salted peanuts
  • 1 cup unsweetened coconut flakes
  • 1-1/4 cups dark chocolate chips
  • 1 cup creamy peanut butter
  • 1 cup butter (1 stick)
  • ½ cup honey
  • 1 teaspoon vanilla extract
  • Chopped peanuts and coconut flakes to coat
Prep Time

Place oats and peanuts in a food processor or blender and grind to a flour consistency; combine with coconut in a medium bowl.

Add chips, peanut butter, butter and honey in a large skillet. Stir frequently over medium-low heat until melted. Remove from heat and stir in oat mixture.

Line a 9×13-inch pan with parchment paper or aluminum foil to overlap on sides. Pour mixture from skillet into pan and smooth evenly with a spatula.

Cool slightly and refrigerate 4-6 hours. Carefully lift out of the pan and turn onto cutting board. Remove paper or foil.

Cut into 48 squares. With your hands, roll each square into a ball. Coat with chopped peanuts or coconut.

Store in an airtight container between layers of wax paper in the refrigerator. These may be frozen.

Makes 48. 2 Per Serving.
