Black Bean, Corn, Avocado and Tomato Salad

  • 4 cans black beans
  • 2 cans corn
  • 1 fresh lime (juiced)
  • 2 Tbl olive oil
  • 1/2 red onion (chopped finely)
  • 15 grape tomatoes chopped (or any tomato)
  • 2 avocados (ripe, but on the firm side) chopped
  • ½ tsp cumin
  • salt and pepper to taste

This easy recipe is a crowd pleaser as an appetizer, as a dinner side dish or lunch salad. You can serve it with whole grain baked chips or crackers; or try it with quinoa. Works well anywhere; from a super bowl party to a summer barbeque.

You can soak your own beans or use canned beans

Same with the corn: roast your own and remove from cob or open a can!

One of my favorite things about this recipe is it can be a last minute, super easy addition!

Prep Time

Place all ingredients in a bowl and gently mix (so you don’t mush up the tomatoes and avocado). Let sit for about an hour so flavors blend and peak. That’s it! You’re done!
